Asparagus Mushroom Saute

This was a quick and easy side dish I served when we had some friends over. I put it together on the fly and was happy with the results. I served it with bacon-wrapped flounder, but it is versatile enough to serve with anything. Hope you enjoy it!

Serves 6.

Ingredients
1 lb thin asparagus spears, ends trimmed and spears cut into 1 to 2-inch lengths
2 shallots, finely chopped
4 garlic cloves, minced
2 packages baby portobello mushrooms (or your favorite), cleaned, stems removed, and sliced
2 Tbsp extra virgin olive oil
sea salt
freshly ground black pepper

Preparation

  1. Warm olive oil in a large skillet over medium high heat. Add shallots and garlic and stir until fragrant, 2-3 minutes.
  2. Add mushrooms and asparagus and saute, stirring occasionally until asparagus is crisp tender, about 5-7 minutes.
  3. Season with salt and pepper.

Sausage and Sweet Potato Stuffed Portobellos

I bought some organic portobellos at the farmer's market this week and couldn't wait to use them. In this recipe, I puree the sausage and sweet potato mixture in the food processor, but if you prefer it chunkier, you can just mash the potato with a fork and hand mix the ingredients. The flavor will be just as good. If you can't find sweet potatoes, try using butternut or acorn squash. We chopped the leftovers and mixed them with eggs for breakfast. Enjoy!

Serves 3-4.

Ingredients
1 lb bulk nitrate-free Italian sausage
1 large sweet potato, peeled and cut in 1-inch cubes
1/2 yellow onion, minced
4-6 Portobello mushroom caps
1/4 cup plus 1 Tbsp chopped fresh basil
2 tsp minced garlic
1/8 tsp ground cayenne pepper
1/4 cup almond meal
good-quality balsamic vinegar
extra virgin olive oil
sea salt
freshly ground black pepper

Preparation
  1. Preheat oven to 400 degrees F.
  2. Place sweet potatoes in a small sauce pan and cover with water. Boil until soft (15-20 minutes), drain well, and set aside.
  3. Clean mushrooms and remove mushroom stems. Mince stems and set aside. Drizzle mushrooms with olive oil and use your hands to coat the tops. Place bottom-side-up and in a shallow baking dish.
  4. While potatoes cook, saute sausage in a large skillet until browned, about 3 minutes. Add onion and mushroom stems and saute an additional 2 minutes or until they begin to soften. Add garlic and cayenne and continue cooking about 1 minute.
  5. Let mixture cool slightly and place in bowl of food processor. Add sweet potatoes and almond meal and pulse until finely chopped and well combined.
  6. Transfer mixture to a large bowl and mix in 1/4 cup basil. Season with salt and pepper.
  7. Scoop about 1/2 cup of sausage mixture into each mushroom and bake for 15 to 18 minutes.
  8. To serve, place mushroom on plate, drizzle with balsamic vinegar, and garnish with basil. I served this with a simple green salad drizzled with balsamic vinegar.

Mushroom Cauliflower Rice

The combination of toasted cauliflower, earthy mushrooms, onions, and walnuts works so well together that you really only need salt and pepper to season it. This side dish goes great with steak. I know the photo doesn't look so appealing, but it really is delicious.

Serves 4.

Ingredients
1 medium head cauliflower, leaves and stem removed
8 oz fresh mushrooms, sliced
1 medium onion, chopped
sea salt
freshly ground black pepper
2 cloves garlic, minced
1/2 cup chopped walnuts
2 Tbsp snipped fresh chives
coconut oil or extra virgin olive oil

Preparation

  1. Preheat oven to 400 degrees.
  2. Cut cauliflower into large pieces and pulse, in batches if necessary, in a food processor until it reaches a rice-like consistency.
  3. Melt 1 Tbsp coconut or olive oil in a rimmed baking sheet. Add cauliflower rice in a single layer and toss with oil. Prop oven door open with a kitchen towel to let steam escape. Roast for 10-15 minutes or until lightly toasted, stirring every 5 minutes until done.
  4. In a large skillet, add 1 Tbsp coconut or olive oil. Saute onions and mushrooms for 10 minutes or until onions start to turn translucent.
  5. Add garlic, walnuts, and cauliflower, tossing to combine. Saute over medium heat for 3-5 minutes or until warmed through and thoroughly combined.
  6. To serve, garnish with snipped chives.

Steak and Asparagus with Wild Gourmet Mushrooms

I am still working on using up my giant container of Manitou Trading Co. Gourmet Mushroom Blend from Costco. Whenever I'm looking for a quick meal, I turn to my freezer full of grass-fed steaks. Tonight we had ribeyes, simply seasoned with salt and pepper. The asparagus and mushroom blend was a great accompaniment. I think this recipe would also work well with broccoli. Enjoy!

Adapted from Primal Blueprint Quick and Easy Meals, Mark Sisson and Jennifer Meier.

Serves 3.

Ingredients
3 steaks
4 cups dried gourmet mushrooms
3 Tbsp butter or olive oil
1 large bunch of asparagus, trimmed and cut diagonally into 1-inch pieces
1 shallot, finely chopped
2 - 3 cloves garlic, finely chopped
sea salt to taste
freshly ground black pepper

Preparation
  1. Lightly season the steaks with salt and pepper and cook using your favorite method.
  2. As the steaks cook, place the mushrooms in a bowl with just enough hot water to cover them. Cover the bowl with a lid or plastic wrap and set aside for at least 15 minutes. Drain mushrooms, reserving liquid. Chop larger pieces of mushroom, if needed.
  3. In a large skillet over medium heat, warm butter or olive oil (or a combination of the two), then add shallot, garlic, and asparagus. Saute 3 - 5 minutes, stirring so the garlic doesn't burn.
  4. Add the mushrooms and a pinch of salt and saute one more minute.
  5. Add 3/4 cup of reserved mushroom broth and turn the heat up to high, bringing the liquid to a rapid simmer for 5-8 minutes. Add additional mushroom broth, as needed.
  6. Season with sea salt and serve asparagus and mushrooms with steak.

Portobello Bacon Burgers with Celery Apple Slaw

Burger season is finally upon us! Since grass-fed beef is so lean, I like to incorporate other ingredients to give it flavor and moisture. This combination of portobello mushrooms, onions, and bacon lend a fabulous flavor. The original recipe does not include bacon, so you can leave it out, if you'd like. I used beef but feel free to substitute buffalo or another ground meat. Although many of these steps can be done simultaneously, you can also prepare the vegetables and bacon earlier in the day, or even the night before, and then finish the burgers just before your meal.

Adapted from epicurious.com.

Makes 4 large burgers.

Ingredients
Burgers
1 medium onion, peeled and cut into large chunks
12 oz portobello mushroom caps (about 4 large), cleaned, stems trimmed, and cut into large chunks
4 thick slices of nitrate-free bacon (optional)
2 Tbsp plus 2 tsp bacon fat or olive oil
1 lb ground beef or buffalo
freshly ground black pepper
sea salt (optional)

Slaw
2 celery ribs
1/2 Granny Smith apple, cored but left unpeeled
1 1/2 tsp cider vinegar
1 tsp olive oil
1 tsp whole grain mustard
1/4 tsp raw organic honey (optional)

Preparation

Bacon racked for baking.

  1. Place bacon on a rack in a shallow pan (jelly roll pan works great). Set oven heat to 400 degrees. Immediately place bacon in oven (before it reaches temperature) until it is about halfway cooked, about 10-15 minutes. Remove from oven and cool slightly. You can also just cook it in a skillet, but baking works best for me.
NOTE: If you don't have a rack, form crumpled pieces of foil into long strips and create a grid in your pan. Put the bacon on top of the foil grid. Not quite as pretty, but it works. You can also just set the bacon directly on a foil-lined shallow pan. Be sure to pat the bacon grease off the bacon strips before processing it.
  2. While bacon cooks, working in batches, pulse mushrooms and onion in food processor until finely chopped. Remove mixture from processor.
  3. Pulse partially cooked bacon in food processor until finely chopped.
  4. Heat 2 Tbsp bacon fat or olive oil in a large heavy skillet. Add mushroom mixture and bacon, stirring to combine. Add 1/4 tsp pepper.
  5. Cook, stirring occasionally, until vegetables begin to brown and liquid evaporates, 15 - 20 minutes (10 - 15 if not using bacon). Transfer to a large bowl and cool slightly, about 15 minutes.
  6. While vegetables cool, prepare slaw by cutting celery and apple into 2-inch long julienne with a slicer (or by hand). Whisk together remaining ingredients and toss with apples and celery. Let stand 15 minutes (while burgers cook) to develop flavors.
  7. Mix ground meat into cooled mushroom mixture with your hands until well combined. I know, I know...no one wants that stuff under their fingernails, but it's really the best way to mix. Form into four 4-inch patties.
  8. Wipe out skillet and heat remaining bacon fat or oil. Cook burgers, turning once, for about 8 minutes total for medium rare. I think these burgers would also stand up to outdoor grilling, but I haven't tried it.
  9. Serve topped with celery apple slaw.
