2 Vidalia onions, sliced thin
1 red pepper, seeded, cored, and sliced thin
1 Tbsp extra virgin olive oil
1 tsp caraway seeds
1/2 cup sauerkraut (I use Gold Mine Raw Organic)
- Over medium high heat, heat olive oil.
- Add onions and pepper and saute until they soften, about 10 minutes.
- Reduce heat to medium. Add sauerkraut and caraway seeds and continue to cook until heated through, about 5-10 more minutes.
- Season with salt and pepper, if desired.
