Sweet Potato Wedges

We had chicken wings for dinner tonight and after trimming all of those wings, I wanted a quick and easy side. These wedges fit the bill. I used smaller sweet potatoes, so I quartered them lengthwise. If you are using larger potatoes, you can cut them into 8 or even 16 wedges. This is a simple recipe with yummy results. The oven temperature can be lowered a little (400 degrees F) if you are baking something else that requires a lower temperature. The cooking time will vary based on the size of your wedges, so keep an eye on them. Enjoy!

Ingredients
4-6 sweet potatoes or yams
1-2 Tbsp extra virgin olive oil
1 tsp paprika
1 tsp sea salt

Preparation
  1. Preheat oven to 425 degrees F.
  2. Clean sweet potatoes and cut lengthwise into wedges. Place on a large, rimmed baking sheet.
  3. Drizzle with olive oil and use your hands to toss together so the potatoes are evenly coated.
  4. Season with paprika and sea salt, tossing again to coat.
  5. Bake for 20 minutes or until potatoes are tender, stirring occasionally.
