We had chicken wings for dinner tonight and after trimming all of those wings, I wanted a quick and easy side. These wedges fit the bill. I used smaller sweet potatoes, so I quartered them lengthwise. If you are using larger potatoes, you can cut them into 8 or even 16 wedges. This is a simple recipe with yummy results. The oven temperature can be lowered a little (400 degrees F) if you are baking something else that requires a lower temperature. The cooking time will vary based on the size of your wedges, so keep an eye on them. Enjoy!
Ingredients
4-6 sweet potatoes or yams
1-2 Tbsp extra virgin olive oil
1 tsp paprika
1 tsp sea salt
Preparation
- Preheat oven to 425 degrees F.
- Clean sweet potatoes and cut lengthwise into wedges. Place on a large, rimmed baking sheet.
- Drizzle with olive oil and use your hands to toss together so the potatoes are evenly coated.
- Season with paprika and sea salt, tossing again to coat.
- Bake for 20 minutes or until potatoes are tender, stirring occasionally.
