Lemon Pepper Vinaigrette

1/2 cup extra virgin olive oil
2 Tbsp freshly squeezed lemon juice
1 Tbsp balsamic vinegar
1 Tbsp Dijon mustard
1 scant tsp freshly ground black pepper

Combine all ingredients in a shaker cup or lidded jar and shake until combined. You could also combine with a whisk in a small bowl.
