Onion Paste


This paste is an alternative for the jarred onion you find in the produce section that often contains unwanted oils and preservatives.

Adapted from Food & Wine, An Entire Year of Recipes, 2004.

Makes about 2 tablespoons.

Ingredients
1 large onion, quartered
1 cup water

Preparation

  1. In a small saucepan over low heat, bring the water and onion to a simmer until tender, about 15 minutes.
  2. Transfer the onion, using a slotted spoon, to a blender or food processor and process until pureed.
