Cucumber Avocado Salad

Cucumbers are, unfortunately, one of those vegetables that often ends up rotting in my refrigerator. It's not that I don't like them--I actually think they are very refreshing. I think it's because I can't cook them so they always taste the same. My issue, not yours! Here's one of my favorite ways to dress up cucumbers. The apple cider vinegar adds just the right touch and the tomatoes are a great contrast. Enjoy!


Ingredients
1 1/2 pound cucumbers (2 medium), sliced thin on a mandoline or food processor
1/4 medium red onion, sliced thin on a mandoline or food processor
1 just ripe avocado, peeled and diced
1/4 cup cherry tomatoes, halved
1/2 cup apple cider vinegar
sea salt
freshly ground black pepper

Preparation

  1. Combine all ingredients but tomatoes in a medium bowl. 
  2. Top with tomatoes.

  1. I have been trying to find recipes that use avocado in them and I'm glad I found this one. I cannot wait to try this out.

  2. I'm allergic to Avocado, any suggestions on a substitution?

    1. Bummer of an allergy! You could really substitute any vegetable; blanched asparagus would be great. Or you could just increase the amounts of cucumber and tomato and leave the avocado out.
