Paleo Ranch Dressing

This dressing is SO good! You'd think from the ingredient list that it would have a coconut flavor but it doesn't at all! All of you who miss your pre-paleo ranch dressing, here's your replacement. I told my husband he's going to want to drink it by the cupful! You can make this ahead and keep it for up to a week in the refrigerator. enjoy!

Ingredients
1 cup paleo mayonnaise
1 cup full-fat coconut milk
2 Tbsp fresh dill, finely minced
1-2 cloves garlic, smashed and ground to a paste with a little sea salt
1 tsp apple cider vinegar
sea salt
freshly ground black pepper, to taste

Preparation
  1. Combine mayonnaise, coconut milk, and vinegar in a medium bowl, stirring with a whisk to combine.
  2. Add dill and garlic and whisk to combine. 
  3. Season with salt and pepper.

    1. Hi, Amber! This recipe is delicious! I actually made some last night to go with our hot wings. Mmmm. While Paleo Table focuses on recipes, other sites and apps provide tools for calculating nutritional information. If you do a quick search, I'm sure you can find one to help you get the information that you need. Thanks for the post!

    2. Sounds good! And okay thank you, it seems there are 2520 calories in the entire recipe. Considering olive oil is 120 calories per T, and the bulk of calories come from the olive oil in the paleo mayo and the coconut milk, I'd assume there are probably 140ish calories per T? I don't know how many servings are in the recipe so I'm not being 100% accurate :) Just putting it out there in case anyone else was curious too!
