Crab Dip with Cucumber

This recipe is so easy to put together and tastes great! Try to make this a couple of hours in advance to let the flavors combine.

Adapted from Primal Blueprint Quick and Easy Meals by Mark Sisson and Jennifer Meier.

Makes 1 cup.

Ingredients
1 tsp tomato paste
1/4 cup paleo mayonnaise
1 Tbsp chopped fresh chives
1 tsp freshly squeezed lemon juice
1 tsp horseradish
dash hot sauce
1/2 pound lump crab meat
1 large seedless cucumber, sliced

Preparation
  1. Whisk together tomato paste, mayonnaise, lemon juice, horseradish, and hot sauce in a small bowl.
  2. In a medium bowl, mix together crab meat and chives.
  3. Pour wet ingredients over crab mixture and stir well to combine.
  4. To serve, transfer crab dip to a small serving bowl. Garnish with additional chives, if desired. Serve with cucumber slices for dipping.
