Meal Plan 40

I am so happy to welcome in the midwest summer with this delicious meal plan. Our grill gets a lot of use when the weather is nice. Beef, chicken, fish, sausage, ribs, shrimp...everything tastes great on the grill! One of the reasons the paleo lifestyle is so easy for us to follow is the great variety of foods we can eat. The bratwurst salad is one of my favorite recipes this week--maybe because it's been so long since I've had a brat. I found some amazing paleo-friendly brats from Nick at Wallace Farms. They are so good, I just placed an order for more. The ribs are also amazing. I am always worried about drying out ribs or them not being tender enough. Well, no worries with this foolproof recipe. It's sure to provide you with fall-of-the-bone goodness. Kabobs are another grilling favorite, and the marinade for the shrimp kabobs gives them a nice buttery flavor without the butter. Yum! A simple blackened fish makes a quick summer meal and can all be done stovetop. Then there's the sausage and butternut squash hash--a great meal for a cooler night. When the weather is so nice, I don't want to spend hours in the kitchen, and I'm sure you don't either. In upcoming weeks I'll share more great quick and easy meals that will help you enjoy a happy and healthy summer. Enjoy!
