Creamy Cinnamon Frosting

This frosting is very easy, light, and fluffy. In fact, this is the lightest, fluffiest paleo frosting I've made. It is very subtly sweet and would be great on chocolate layer cake, pumpkin bars, etc.  It's just perfect for my molasses cookies. I sprinkled a little cinnamon on top of the cookies after frosting, just to make them look more appealing.

Makes 1 cup.

Ingredients
1 cup palm shortening
3 Tbsp raw honey
2 Tbsp vanilla extract
3 tsp cinnamon

Preparation
  1. Place all ingredients in a medium mixing bowl.
  2. Using a hand mixer, blend until fluffy.
  3. Use immediately or refrigerate up to one week.

  2. Hi, Cathleen. You could try half butter and half coconut oil. I haven't tried it before, but it seems like it would work. Another idea is to use coconut butter. It wouldn't be as fluffy, but it would taste good. Please let me know if you give it a try.
