Meal Plan 29

This week's recipes are complements of our friend, Rob, a native Virginian. Rob is quite a character with his southern drawl and uniquely entertaining take on life. He is the only person I know who got into CrossFit, truly excelled at it, left it for a year, and is now back full force. During his year off, Rob gained 20 pounds, he and his wife had their first baby, and he became a business owner. Rob works with my husband and nephew, so I see him just about every weekday. And while Rob initially turned his nose up at paleo, he couldn't resist for long while enmeshed in our paleocentric environment. (By the way, Rob lost his 20 pounds within 6 weeks of going back to CrossFit and starting paleo.) Now he's shared some of his favorite home-cooked Southern comfort foods with me AND you. I made a few tweaks here and there to make them paleo. But the most important lesson I learned this week is that sometimes less is more, even with ingredients. If you are looking for a simple yet delicious meal plan with few ingredients, this is it! Enjoy!

Meal Plan 28

Just getting back into the swing of things after a couple of special posts. This meal plan includes one of my favorite comfort foods: shepherd's pie. I would love for you to try it and let me know how you like it...especially you Paleo Table followers in England who have, undoubtedly, tried your share of shepherd's pie. The butternut squash lasagna is another good one, especially if you still crave pasta once in a while. Lot's of warm, comforting foods this week, plus a refreshing (and pretty) way to serve beets.  Thanks to all of you who have liked the Paleo Table Facebook page and have subscribed to Paleo Table emails. Meal Plan 27

Thanks to all of you who have left comments, subscribed, and liked Paleo Table on Facebook. I love seeing those numbers grow! I hope you've had a chance to make the sweet potato recovery bars I posted last week. Please leave a comment and let me know what you think! This week's meal plan has some great recipes. The duck is one of my favorites; it's so easy and delicious! Take advantage of the leftover sweet potato puree and caramelized onions to whip up the inside-out burgers. Stay tuned later this week for a special guest post on paleo beers. Meal Plan 26

I am so excited to share a new paleo item with you this week: Pure Wraps by improveat. This is a relatively new item  that I was able to order online. It's a square wrap made simply of coconut meat, coconut water, and Himalayan salt. These wraps are gluten free, corn free, soy free, dairy free, and egg free. They taste great and open a whole new world of paleo eating. The wraps are hearty and have a  slight oily texture from the coconut. The coconut flavor is subtle, making this a very versatile item. I tried the curry flavor with some Indian takeout last weekend and, while it's not the same as warm, soft naan, it does offer a delicious conduit for transferring the food to your mouth! Meal Plan 25

It's getting cold out there, and all I want is comfort food! Fortunately, there is an endless amount of delicious paleo comfort foods. The difference between these and traditional comfort foods is that these meals don't result in a bloated belly and the need for a long nap! These recipes have no grains, no refined sugar, no dairy...nothing but wholesome paleo goodness. I used a lot of ground beef this week, so if you are looking for an inexpensive food budget, this should be a good one!

Meal Plan 23

It's been a busy week this week, but a good one! Fall is here in Chicagoland, so stay tuned for more cool-weather treats. Meal Plan 22

Our first week back at school is always a little rough. The kids are tired when they get home and I find that I have less time to make dinner in the evening because I am trying to feed my family earlier. I've been doing as much prep work as possible in the morning or afternoon. For those lucky enough to have that option, it really helps speed things up in the evening. You'll notice a couple of jalapeno recipes this week. I am trying diligently not to let any of my garden produce go to waste. If you like an extra kick, leave in a few of the jalapeno seeds. Meal Plan 21

Our last week of summer kept my mind on vacation with a couple of recipes reminiscent of our days in South Carolina. While I am truly looking forward to fall and winter's roasts, stovetop preparation, and crock pot meals, I will miss using our grill as the seasons change. While we technically still have at least a month or two left of grilling weather, it has already started getting dark earlier and it's just not as much fun grilling in the dark!
